Chicken and Corn Chowder (or Nanchow)

Remember the cooking challenge we did on The Block? Well, we won with this recipe…

My Nan makes it and now we make it!

Ok, so I am NOT a cook. Not good at it. Although, I am capable, it’s just that I don’t enjoy it. I cook for survival.

But this one is easy! I can do this one!

Ingredients

1 onion
Bacon
1 carrot
2 potato
1 cooked barbecue chicken, with meat removed from carcass
1 can corn kernels
1 can of cream of chicken soup
1/2 L milk

Instructions

Saute onion and diced bacon. Add dice carrot and diced potato. Add the chicken, then the can of corn kernels (including the juice). Add the can of soup, then the milk.

Simmer for 30 mins or until veggies are soft.

Garnish with salt and pepper and serve with crusty bread.

[Chipped bowl – that’s the household for you ;)]

PS. Yes, be shocked that I even took photos of food prepared by myself! This is the first and last time you’ll see my blog turn in to a food blog hahaha! I’m just not creative at all in that area! I’ll leave the food blogging to the experts 🙂 I’m the kinda girl who flicks past the recipes as fast as I can in the magazines. My sister comes to my house and rips them all out as she knows I’ll never look at them. I’m just not that in to food. I go to restaurants and order the same thing every time. I’m not adventurous at all!

    I made this back when I first saw it on The Block and it’s quickly become a family favourite.
    So quick and easy and incredibly tasty.
    I might have to whip up a pot today, I think.

    I made this while you were on the block after you won the challenge. It is now a family staple, the kids love it.
    So yummy after football training with a hunk of bread.
    Even the husband thinks its gourmet & takes it to work the next day. Thank Katrina’s Nanna. Now your soup is famous.

    I am trying to make myself go through some mags to get some new recipes……
    I think I’m going to try this one……it looked yummy when you made it on the Block but I’d forgotten about it……

    I make this every couple of weeks so easy & tasty, I am gluten free so I use a gluten free soup & it is delicious. Like you I don’t enjoy meal cooking, don’t mind baking but hate the nightly meal time drag, ask Nan if she has any more one pot wonders for us LOL!

    Chipped plates and coffee cups at my place. Every time my mum visits she has a go at me then goes buys me new ones.
    Looks very easy to make.

    I am totally with you on the cooking department Katrina! I only cook because I have to eat. My 22 year old daughter just loves to cook. She certainly didn’t get the passion from her mother.
